Aseeda
Recipe
Ingredients:
1/2
kg rye flour
Water
1/2
cup yeast
1 tsp salt
1 tsp salt
Method
Add
1/2kg flour, 1/2 litre of water and yeast into bowl and mix together. Leave in warm place for 5 hours to rise.
Boil 1 litre of water with salt. When water is boiling, add aseeda mixture and mix with a wooden spoon.
Once thickening (add more flour if dough thin*), add 1/2 cup of water and simmer until bubbling.
Pour
into bowl, and let stand until cool and thick.
Turn upside down and plonk onto plate to serve, covering with a sauce such as tagalia.
*For
the Nuba Mountains edition, when making mixture, add much more flour until the
mixture is very thick, "until the spoon can stand in it"

Sudan
is located in the northeast of Africa. There are a lot of Sudanese cuisine that
is influenced by exotic culture.
For example Syria, Turkey, Egypt and Ethiopia brought spice and red pepper to Sudan and influenced Sudanese culture very much.
And Sudanese cuisine is different by region.
Northern Sudan is classified into desert area. And the northern Sudanese tend to eat the cuisine that include wheat flour.
Particularly, northern Sudanese often cook and eat the cuisine called gourrassa (the right chart). Gourrassa is invented native Sudanese and made of wheat.
In the west part of Sudan, there are sheep and
cow everywhere and a lot of group that have different culture. But every people
still eat simply. So people tend to eat dairy product.
In
the southern Sudan, there are a lot of rivers and swamp. So in southern Sudan,
people can find unique plant and animal. So people in the southern Sudan tend
to eat fish cuisine with rice or porridge.
Sudanese cuisine has been enveloping and
changing, but almost all of these cuisine are still simple and natural.
Sudanese often eat Wheat, Beef, sheep meat, tomatoes, sesame seeds and rice.
And in Sudan, there are a lot of variety of stews. Stews are often eaten with bread or porridge. The aseeda is one of the most popular porridge. Aseeda is often eaten by every region of Sudan.
So I thought that research of aseeda would give me great understanding of Sudanese cuisine.
My recipe is traditional Sudanese aseeda.
